Calling all dill lovers! This fragrant flavour bomb is the easiest salad you could possibly imagine. Perfect for lunch all by itself or as a side for any occasion. It can be served warm, room temperature or cold and tastes fabulous. There are only 3 ingredients required and it can be made in a heartbeat. The recipe is flexible and one can easily change the quantities of any of the three ingredients without altering the final results. Lentils, dill and onions are all that is required to make this gem of a salad.
Prep and assembly
2 cups of brown or black lentils (feel free to use 1 cup or as much as you like)
1 bunch of dill
1 onion
2 tablespoons avocado oil or other neutral vegetable oil
salt
1/2 teaspoon pepper

If your lentils are dry, I recommend soaking them for 1 hour prior to use as they will need to be boiled in salted water until soft. Soaking the lentils overnight is what I do when I know that I am making anything with lentils the following day.
If the lentils are canned, be sure to rinse them thoroughly.
Finely dice the onion and dill.
In a non stick pan add the avocado oil and fry the onions until soft and translucent - no color.
Add the dill to the onions and stir in the pepper.
Add the cooked or canned lentils combine and adjust the salt is needed. That’s it!
