This recipe is a vibrant summery salad that is a four ingredient marvel. The tart zing is addictive. Spinach, white onion, tomato and freshly squeezed lemon juice marry with some rich extra virgin olive oil creating this healthy transformative salad. This gorgeous salad is easy and ingredient quantities are super flexible. Think of this recipe as a flexible blueprint, easily tweaked to suit your palate.

Prep and assembly


juice of 1 or 2 lemons
1 tomato, diced - 1/2 cup roughly, feel free to add more or less
1 big bunch of of baby spinach roughly chopped - 1 or 2 cups loosely packed when chopped, feel free to add more or less
1/2 white onion finely diced - adjust to taste, I would advise not exceeding 1/2 the onion chopped
Extra Virgin Olive Oil - 1/4 cup roughly
salt to taste - start with 1/4 tsp
black pepper to taste - start with 1/8 tsp
Assembly
Juice the lemon(s) and put the juice in your salad bowl. Begin with only one lemon. If it is juicy you likely won’t need the second! Add more lemon juice at the end once the salad is combined to enhance the tart flavour.
Dice the tomato and add to the bowl with lemon juice.
Finely dice the onion, add to the diced tomato and lemon.
Combine well and add some olive oil. I start with about 1/4 cup of oil and add more as needed. Add the salt and pepper - Begin with 1/2 teaspoon of salt and 1/4 teaspoon of pepper - Adjust to taste.
