Question : where can I buy non-enriched flour?
Perhaps try a health food store?
Since I last posted, I discovered that only whole wheat flour (not white flour) can be sold in the USA without the addition of “enrichment” items. Who knew?
And if available, stone ground wheat is preferable.
I think you'll find that King Arthur All-Purpose flour in the US is not enriched and will work superbly for this recipe.
